Varagu Pulao (Kodo Millet Pulao)


Varagu pulao can be served for lunch.

Quantity mentioned below can be used for : 2 people

Ingredients :

Oil - 3 tsp
Cloves - 2
Bay leaf - 1
Cinnamon - 1/2 inch piece
Star anise - 1/2
Onion - 1 medium (sliced)
Beans - 4 nos (shopped)
Carrot - 1 medium (chopped into long pieces)
Sweet corn - 50 gm
Green peas - 50 gm
Ginger garlic paste - 1 tsp
Tomato - 1 medium (diced)
Salt - as required
Turmeric powder - 1/4 tsp
Chilli powder - 1 tsp
Coriander powder - 1 tsp
Coriander leaves - 4 stems (chopped finely)
Mint leaves - 4 stems (chopped finely)
Varagu (Kodo millet) - 1.5 cups
Water - 4 cups

Method :

1. Heat oil in a pan.



2. Add cloves, bay leaf, cinnamon and star anise.



3. Add sliced onions and fry well till it turns light brown in colour.



4. Chop the required vegetables.



5. Add ginger garlic paste to the pan.



6. Add diced tomato to the pan.



7. Let it cook till it turns mushy. Add salt and turmeric powder.



8. Add chilli powder and coriander powder.



9. Add chopped vegetables, coriander leaves and mint leaves.



10. Let it cook for 10 minutes.



11. In a pressure cooker, take the Varagu. (Kodo millet)



12. Add the cooked vegetables.



13. Pour required quantity of water and let it cook in medium flame for 3 whistles.



14. Varagu pulao ready.
