Masala Egg Fry


Masala Egg Fry can be served for lunch / as a filling for Egg Puffs.

Quantity mentioned below can be used for : 4 people / as a filling for 8 Puffs.

Ingredients :


Oil - 1 tsp

Mustard - 1/2 tsp
Curry leaves - few
Onion - 1 medium (finely sliced)
Tomato - 1/2 medium (chopped) 
Capsicum - 5 thin slices
Ginger garlic paste - 1 tbsp
Eggs - 4 nos
Salt - as required
Turmeric powder - 1/4 tsp
Chilli powder - 1 tsp
Coriander powder - 1/4 tsp
Garam masala - 1/2 tsp
Curry masala  - 1/4 tsp
Water

Method :

1. Boil the eggs in water adding salt. Peel the skin and slit the eggs. Set aside.

2. In a pan, add oil,mustard and curry leaves.




3. Then add chopped onion, tomato and capsicum. Fry till the onion turns brown in colour.




4. Add Ginger garlic paste and let it fry on medium flame till raw smell disappears.




5. Add turmeric powder,chilli powder,coriander powder,garam masala,curry masala and salt.




6. Now it's all set for the eggs to be added.




7.  Toss well in low heat.

                


Serve the masala Egg Fry for lunch as a side dish. 

          Or cut the eggs into halves at the end. Use it as a filling to make Egg Puffs.
