Tempered Curd Rice


Tempered curd rice can be served for lunch along with Spicy Potato Roast <~ click for recipe 

Quantity used below can serve : 2 people

Ingredients :

Oil - 1 tbsp
Mustard - 1 tsp
Curry leaves - few
Ginger - 1 inch ( chopped finely)
Green chillies - 4
Carrot - 1/2 (grated)
Boiled rice - 500 gm
Salt - as required
Curd - 200 gm
Milk - 100 ml
Coriander leaves - chopped to garnish

Method :

1. Chop ginger,carrot and coriander Leaves.

              

2.. In a pan, add oil, mustard and curry leaves. Wait for it to splutter.


3. Add  ginger and green chillies. Fry till the raw smell goes.




4.    Add grated carrot. Toss for few minutes, keep it aside.



5. Add boiled rice in a bowl and mash it well.



6. Add salt, curd and milk.



7. Add the tempered mixture and mix well.





8. Finally garnish with chopped coriander leaves (you can add pomegranate and green grapes if
    needed)
