Vegetable stew (for appam)


Vegetable stew can be served as a side dish for aapam.


Ingredients :

Oil - 2 tbsp
Fennel - 1 tsp
Clove - 2
Cardamom - 2
Curry leaves - few
Onion - 2 (medium sized) chopped
Green chilli - 4 (chopped)
Ginger - 1 inch piece (grated)
Vegetables - only potatoes / potatoes and peas / carrots,potatoes and peas
Coconut milk (thick) - 500 ml
Salt - as required
Pepper - 1 tsp
Water - as required

Method :

1. Heat oil in a kadai. Add fennel,clove,cardamom and fry for a minute,

2. Add curry leaves,onion,ginger and green chilli. Add them one by one and fry.

3. Add in the vegetables and stir fry. Add salt and pepper.

4. Add coconut milk and allow the vegetables to cook. (Keep the lid closed)

5. Add water if  necessary.
